Prep Time: 15 mins
Cook Time: 4–6 hrs (Slow Cooker) or 45 mins (Stovetop)
Total Time: 4 hrs 15 mins
Servings: 6–8 bowls
Ingredients
1 medium head green cabbage, chopped into bite-sized pieces
1 large yellow onion, sliced
1 tbsp fresh ginger, finely grated (natural anti-inflammatory agent)
1 tbsp fresh turmeric, grated (or 1 tsp ground turmeric)
4 cloves garlic, minced
6 cups vegetable or bone broth
2 tbsp extra virgin olive oil or coconut oil
1 tbsp apple cider vinegar
1/2 tsp cayenne pepper or crushed red pepper flakes
Salt and freshly cracked black pepper, to taste
Instructions
1. Sauté Aromatics (Optional Step): Heat olive oil in a skillet over medium heat. Add the sliced onion, minced garlic, grated ginger, and turmeric. Sauté for 3–4 minutes until soft and fragrant.
2. Combine in Slow Cooker: Transfer the sautéed aromatic mixture into a slow cooker (or Dutch oven). Add the chopped green cabbage and pour over the 6 cups of vegetable/bone broth.
3. Season: Add the apple cider vinegar, cayenne pepper, salt, and black pepper. Stir everything well to combine.
4. Slow Cook: Cover and cook on LOW for 6 hours or on HIGH for 3 to 4 hours until the cabbage is deeply tender and translucent, and the broth becomes rich and aromatic.
5. Adjust & Serve: Taste and adjust seasoning with additional salt or lemon juice if desired. Ladle warm broth and tender cabbage into bowls and serve hot.
Chef’s Pro Tips
Anti-Inflammatory Boost: Adding a pinch of black pepper alongside turmeric is essential—piperine in black pepper enhances turmeric absorption (curcumin) by up to 2,000%.
Broth Selection: For maximum joint support and collagen benefits, use high-quality bone broth instead of basic vegetable stock.
(Note: While cabbage, ginger, and turmeric are celebrated for their strong anti-inflammatory properties, remedies like this are delicious and soothing home comfort foods, but not a replacement for professional medical treatments!)
