Prep time: 10 mins | Bake time: 25 mins | Servings: 6 slices
Ingredients
3 large eggs, separated
3 oz cream cheese, softened (or full-fat Greek yogurt)
1/4 tsp cream of tartar (or 1/2 tsp lemon juice)
1 tbsp zero-calorie powdered sweetener (optional, for sweet variation)
1/2 tsp vanilla extract (optional)
Pinch of salt
Instructions
1. Prep Oven: Preheat your oven to 300°F (150°C) and line a round baking dish or baking sheet with parchment paper.
2. Whip Egg Whites: In a clean, dry bowl, add the egg whites and cream of tartar. Beat on high speed using a hand mixer until stiff, firm peaks form.
3. Mix Yolks: In a separate bowl, mix the egg yolks, softened cream cheese, sweetener, vanilla extract, and a pinch of salt until smooth and creamy.
4. Fold Gently: Carefully fold the egg yolk mixture into the whipped egg whites using a spatula, being gentle so as not to deflate the fluffy whites.
5. Shape & Bake: Transfer the fluffy batter into the parchment-lined dish, smoothing the top into a round loaf shape. Bake for 25–30 minutes until golden brown on top and set in the center.
6. Cool & Slice: Allow to cool completely before slicing and serving.
