Prep time: 5 mins | Freeze time: 3β4 hours | Servings: 4
Ingredients
16 oz full-fat or 2% cottage cheese
2β3 tbsp zero-calorie liquid sweetener (or powdered monk fruit/erythritol)
1 tsp vanilla extract
Flavor Variations: 1/2 cup frozen strawberries (for strawberry flavor) or 1/2 cup frozen mango chunks (for mango flavor)
Instructions
1. Blend Base: Add the cottage cheese, sweetener, and vanilla extract into a food processor or high-speed blender.
2. Add Flavor: Add your choice of fruit (such as frozen strawberries or mango) if making a flavored version. Blend on high for 2β3 minutes, stopping to scrape down the sides, until completely smooth and velvety with zero curds remaining.
3. Transfer: Pour the smooth mixture into a freezer-safe container or tupperware.
4. Freeze: Freeze for 3 to 4 hours. Stir the mixture once every hour for the first 2 hours to break up ice crystals and maintain a soft-serve texture.
5. Scoop & Serve: Let sit at room temperature for 5β10 minutes before scooping if frozen solid.
