Seven Layer Taco Salad

Prep time: 20 mins | Cook time: 10 mins | Servings: 8

Ingredients

1 lb lean ground beef (90%) or ground turkey

 1 packet (1 oz) low-sodium taco seasoning

 2/3 cup water

1 head iceberg or romaine lettuce, shredded (about 6 cups)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (canned drained or frozen thawed)

1 1/2 cups sour cream (or plain Greek yogurt for a lighter option)

1 1/2 cups shredded cheddar cheese

 1 cup cherry tomatoes, halved

 3 cups crushed tortilla chips

 1/2 cup green onions, sliced

 1/4 cup fresh cilantro, chopped

Instructions

1. Cook Meat: Heat a skillet over medium-high heat. Add ground beef or turkey, breaking it apart, and cook until browned (about 6–8 minutes). Drain excess fat.

2. Season Meat: Stir in taco seasoning and 2/3 cup water. Bring to a simmer and cook for 3–4 minutes until sauce thickens. Remove from heat and allow meat to cool slightly.

3. Layer the Base: In a large glass trifle bowl or deep serving bowl, layer shredded lettuce evenly at the bottom.

4. Build Middle Layers: Add cooled taco meat over lettuce, followed by black beans, corn, and shredded cheddar cheese.

5. Add Cream & Tomatoes: Spread sour cream (or Greek yogurt) evenly over cheese layer, then top with halved cherry tomatoes and crushed tortilla chips.

6. Garnish & Serve: Finish with sliced green onions and chopped fresh cilantro. Serve immediately or chill until ready to enjoy.
