Prep time: 15 mins | Bake time: 55 mins | Yield: 1 loaf (8–10 slices)
Ingredients
3 medium ripe bananas, mashed (about 1 1/4 cups)
1/3 cup unsalted butter, melted
3/4 cup granulated sugar (or erythritol for low-carb)
1 large egg, room temperature
1 tsp vanilla extract
1 1/2 cups all-purpose flour (or almond flour)
1 tsp baking soda
1/2 tsp salt
1/2 cup semi-sweet chocolate chips (or sugar-free chocolate chips)
1/2 cup chopped walnuts or pecans (optional)
Instructions
1. Prep Oven & Pan: Preheat your oven to 350°F (175°C). Grease a 8×4-inch or 9×5-inch loaf pan, or line it with parchment paper.
2. Mash & Mix Wet: In a large bowl, mash the ripe bananas with a fork until smooth. Stir in melted butter, sugar, beaten egg, and vanilla extract until well combined.
3. Combine Dry: Fold in the baking soda and salt. Gently stir in the flour until just combined—do not overmix.
4. Fold Mix-ins: Carefully fold in the chocolate chips and optional chopped nuts.
5. Bake: Pour batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
6. Cool & Slice: Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
